Blueberry Cottage Cheese Bake

A creamy, nutritious, and budget-friendly bake filled with juicy blueberries, perfect for breakfast or dessert.

  • 2 cups cottage cheese
  • 1 cup blueberries (fresh or frozen)
  • 3 eggs
  • 1/2 cup rolled oats
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the cottage cheese, eggs, honey or maple syrup, and vanilla extract in a large mixing bowl. Mix well until fully combined.
  3. Stir in the rolled oats, baking powder, cinnamon, and a pinch of salt, making sure everything is evenly distributed.
  4. Fold in the blueberries gently, taking care not to smash them.
  5. Pour the mixture into a greased baking dish, spreading it out evenly.
  6. Bake for 30-35 minutes or until the center is set and the top is golden brown.
  7. Allow the bake to cool slightly before serving.

Notes

Serve warm or at room temperature; can top with Greek yogurt, nuts, or additional honey or maple syrup.
