Blueberry Cottage Cheese Breakfast Bake

A delightful and wholesome breakfast bake combining creamy cottage cheese with sweet blueberries, perfect for busy mornings or brunch.

  • 2 cups cottage cheese
  • 1 cup rolled oats
  • 1 cup blueberries
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the cottage cheese, rolled oats, blueberries, eggs, honey or maple syrup, vanilla extract, baking powder, cinnamon, and pinch of salt in a large mixing bowl.
  3. Stir the mixture until everything is well blended.
  4. Pour the batter into a greased baking dish, spreading it evenly.
  5. Bake in the preheated oven for 30 to 35 minutes, or until the top is set and golden brown.
  6. Let the bake cool for a few moments before slicing and serving.

Notes

Leftovers can be stored in airtight containers and are suitable for freezing. You can mix the ingredients the night before and bake in the morning.
