1 cup cottage cheese
1 cup rolled oats
1 large egg
1/4 cup honey or maple syrup
1 tsp vanilla extract
Zest of 1 large lemon (about 1 tbsp)
1/2 tsp baking powder
Pinch of salt
3/4 cup fresh or frozen blueberries
Instructions
Preheat your oven to 350°F (175°C). Grease a 24-cup mini muffin pan to prevent sticking.
Combine cottage cheese, rolled oats, the egg, honey or maple syrup, vanilla extract, lemon zest, baking powder, and salt in a blender or food processor. Blend until smooth.
Pour the mixture into a bowl. Gently fold in the blueberries, letting the mixture sit for about 5 minutes to thicken.
Divide the batter among the muffin cups, filling each about three-quarters full to allow for rising.
Bake in the preheated oven for 18-22 minutes. The bites should be firm and golden brown on top when done.
Let them cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
For a creamier texture, substitute Greek yogurt for cottage cheese. Maple syrup can be used for a vegan option.
