Blueberry and Lemon Zest Cottage Cheese Bites

A delightful treat combining creamy cottage cheese, zesty lemon, and sweet blueberries—perfect for breakfast or snacks.

  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 1 large egg
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • Zest of 1 large lemon (about 1 tbsp)
  • 1/2 tsp baking powder
  • Pinch of salt
  • 3/4 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 24-cup mini muffin pan to prevent sticking.
  2. Combine cottage cheese, rolled oats, the egg, honey or maple syrup, vanilla extract, lemon zest, baking powder, and salt in a blender or food processor. Blend until smooth.
  3. Pour the mixture into a bowl. Gently fold in the blueberries, letting the mixture sit for about 5 minutes to thicken.
  4. Divide the batter among the muffin cups, filling each about three-quarters full to allow for rising.
  5. Bake in the preheated oven for 18-22 minutes. The bites should be firm and golden brown on top when done.
  6. Let them cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

For a creamier texture, substitute Greek yogurt for cottage cheese. Maple syrup can be used for a vegan option.
