Blueberry Quinoa Breakfast Bake

A delightful breakfast bake combining protein-packed quinoa with juicy blueberries for a nutritious start to your day.

  • 1 cup quinoa, rinsed
  • 2 cups almond milk
  • 1 cup blueberries, fresh or frozen
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the rinsed quinoa and almond milk in a medium pot and bring to a boil over medium heat.
  3. Reduce the heat and let it simmer for about 15 minutes or until the quinoa absorbs all the liquid.
  4. Mix the cooked quinoa with blueberries, honey or maple syrup, vanilla extract, cinnamon, and salt in a large mixing bowl.
  5. Pour the quinoa mixture into a greased baking dish, spreading it evenly across the bottom. If using, sprinkle chopped nuts on top.
  6. Bake for 30-35 minutes, or until the dish is set and has a light golden top.
  7. Allow it to cool slightly before serving, and enjoy!

Notes

Best served warm, optionally with extra honey or nutmeg on top. Pairs well with Greek yogurt or nut butter.
