  • 1 tablespoon vanilla extract

  • 2 ounces cream cheese, softened
  • 1 cup pure maple syrup
  • 2 tablespoons bourbon
  • 1 teaspoon vanilla extract
  • Pinch fine salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Arrange the bacon on a wire rack set above a baking tray and bake for about 15 minutes until crispy. Transfer to paper towels to drain and chop finely when cool.
  3. Whisk together the eggs, milk, vanilla extract, and cinnamon in a shallow bowl until well combined.
  4. Mix the cream cheese with the finely chopped bacon in a separate bowl until smooth.
  5. Create pockets in each slice of bread and fill them generously with the bacon-cream cheese mixture, sealing them well.
  6. Dip each stuffed slice into the egg custard, ensuring thorough coating.
  7. Heat butter over medium heat in a skillet. Cook the stuffed slices for 3-4 minutes on each side until golden brown.
  8. Warm the maple syrup in a saucepan with bourbon, additional vanilla extract, and a pinch of salt over low heat for about 2 minutes.
  9. Serve immediately, drenching the French toast in the warm bourbon maple glaze.
