Breakfast Burrito Bowl

A vibrant and customizable breakfast bowl that combines protein, grains, and fresh vegetables for a nourishing start to your day.

Ingredients

  • 1 cup cooked quinoa or brown rice
  • 1 cup black beans, drained and rinsed
  • 4 large eggs
  • 1 bell pepper, diced
  • 1/2 onion, diced
  • 1 avocado, sliced
  • 1/2 cup salsa
  • 1 cup fresh spinach
  • Olive oil for cooking
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat a splash of olive oil in a skillet over medium heat.
  2. Add the diced onion and bell pepper. Sauté for about 4-5 minutes until soft.
  3. Push the veggies to one side and crack the eggs into the pan. Scramble until fully cooked.
  4. Stir in the black beans until heated through.
  5. Quickly toss in the spinach until wilted, then remove from heat.
  6. Layer the cooked quinoa or rice at the base of a bowl. Top with the sautéed mixture, avocado slices, and salsa.
  7. Sprinkle with fresh cilantro, if desired. Enjoy!
