Breakfast Casserole

A delightful and hearty Breakfast Casserole that’s perfect for busy mornings or family gatherings, blending protein, vegetables, and cheesy goodness.

  • 6 eggs
  • 1 cup cottage cheese
  • 1 cup spinach
  • 1 cup cooked chicken, shredded
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup diced bell peppers
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the eggs, cottage cheese, salt, and pepper until well blended.
  3. Gently incorporate the spinach, shredded chicken, diced bell peppers, and half of the shredded cheese.
  4. Pour the mixture into a greased baking dish, spreading it evenly.
  5. Sprinkle the remaining cheese on top.
  6. Bake for 30-35 minutes, or until the center is set and the top is beautifully golden.
  7. Allow it to cool slightly before slicing and serving warm.

Notes

Consider adding cooked bacon instead of chicken. Serve with fresh fruit, salad, or avocado slices for added creaminess.
