Breakfast Protein Biscuits

Delicious and nutritious breakfast biscuits packed with protein from Greek yogurt and chicken, perfect for meal prep and family gatherings.

Ingredients

  • 1¾ cups Plain 2% Greek Yogurt
  • 4 Large Eggs (room temp)
  • 2½ cups All-Purpose Flour
  • ¼ cup Ground Flaxseed
  • 1 tbsp Baking Powder
  • 2 tsp Salt
  • 1 tsp Garlic Powder
  • 1½ cups Spinach, wilted & squeezed dry
  • ½ cup Chives, chopped
  • 1½ cups Cheddar Cheese (½ cup reserved)
  • 2 cups Diced Chicken
  • ½ cup Sun-Dried Tomatoes, chopped
  • 1½ cups Feta (½ cup reserved)
  • 2 tsp Dried Basil (or ¼ cup fresh, added after baking)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Whisk together the Greek yogurt and eggs until smooth.
  3. Gradually stir in the flour, ground flaxseed, baking powder, salt, and garlic powder until just combined.
  4. Gently fold in the spinach, chives, diced chicken, sun-dried tomatoes, and feta—saving some cheese for the top.
  5. Scoop the dough onto a lined baking sheet using a ⅓ cup measure.
  6. If desired, sprinkle the reserved cheese on top before placing it in the oven.
  7. Bake for approximately 25 minutes or until the biscuits turn a golden brown.
  8. Allow to cool for about 10 minutes before serving or storing.

Notes

These biscuits can be stored in an airtight container in the fridge for 3-5 days or frozen for up to three months.
