Breakfast Sweet Potato

A wholesome and hearty breakfast dish combining sweet potatoes, crispy bacon, velvety eggs, and melted cheese.

Ingredients

  • 1 large sweet potato
  • 2 slices of bacon
  • 2 eggs
  • 1/2 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Chives or green onions for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potato thoroughly and pierce it with a fork.
  3. Place it in the oven and bake for about 45 minutes, until tender.
  4. Cook the bacon in a skillet over medium heat until crispy, then chop into bite-sized pieces.
  5. Crack the eggs into the same skillet and cook them to your liking.
  6. Cut the baked sweet potato in half lengthwise and scoop out some flesh to create a bowl-like shape.
  7. Combine the scooped sweet potato with the bacon and season.
  8. Fill each half of the sweet potato with the mixture, top with eggs, and sprinkle cheese over everything.
  9. Return to the oven for 5–10 minutes until the cheese melts.
  10. Garnish with chives or green onions and serve warm!

Pair with a side of fresh fruit or a smoothie for a balanced breakfast.
