Breakfast Wraps

Delightful breakfast wraps filled with scrambled eggs, bell peppers, and spinach. Quick to prepare and perfect for busy mornings or leisurely weekends.

Ingredients

  • 4 flour tortillas
  • 4 eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup diced bell peppers
  • 1 cup spinach
  • 1/2 cup cheese (optional)
  • 1/2 cup cooked meats (optional)

Instructions

  1. In a bowl, whisk the eggs, milk, salt, and pepper together until smooth.
  2. Heat a non-stick skillet over medium heat and scramble the egg mixture until fully cooked.
  3. Lay out the tortillas flat. Fill each tortilla with a portion of scrambled eggs and diced bell peppers, spinach, cheese, or cooked meats.
  4. Roll each tortilla tightly, tucking in the sides as you go.
  5. Serve immediately or wrap in foil and refrigerate for meal prep.

Notes

For variations, try adding herbs or spices to the eggs or using different types of cheese. Great served with salsa or guacamole.
