Cheesy Bacon Egg Muffins

Delicious and fluffy muffins packed with cheesy goodness and crispy bacon, perfect for busy mornings or as a make-ahead brunch option.

  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup cooked and crumbled bacon
  • 1/2 cup diced bell peppers (optional)
  • Salt and pepper to taste
  • Cooking spray or muffin liners

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a muffin pan with cooking spray or line it with muffin liners.
  3. In a large bowl, whisk together the eggs, salt, and pepper until well combined.
  4. Stir in the shredded cheese, crumbled bacon, and diced bell peppers (if using) until everything is evenly mixed.
  5. Pour the egg mixture evenly into the muffin cups, filling each one about 3/4 full.
  6. Bake in the preheated oven for 20-25 minutes, or until the muffins are set and slightly golden on top.
  7. Let them cool for a few minutes before carefully removing them from the pan.
  8. Store any leftovers in the fridge or freezer for a quick breakfast option later.
