Cheesy Muffin Tin Cottage Cheese Egg Bites

Delicious and protein-packed egg bites perfect for breakfast or a snack, easy to customize with your favorite ingredients.

  • 6 large eggs
  • 1 cup cottage cheese
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup chopped vegetables (bell peppers, spinach, etc.)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray or a drizzle of oil.
  2. In a large bowl, whisk together the eggs, cottage cheese, and shredded cheese until smooth.
  3. Gently fold in the chopped vegetables and season with salt and pepper.
  4. Pour the mixture evenly into the muffin tin, filling each cup about two-thirds full.
  5. Bake for 18-22 minutes, or until the bites are set and golden on top.
  6. Allow to cool for a few minutes before removing from the tin. Serve warm or store in an airtight container for later.

Notes
