Cheesy Potato Egg Scramble

A delightful breakfast dish combining crispy potatoes, fluffy eggs, and gooey cheese, perfect for any day of the week.

  • 2 medium potatoes, cubed
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • Optional: diced ham or bacon
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped chives or parsley for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the cubed potatoes and cook until they are crispy and golden brown, about 10-15 minutes.
  3. While the potatoes are cooking, beat the eggs in a bowl and season with salt and pepper to taste.
  4. Push the cooked potatoes to one side of the skillet and pour the eggs into the empty side. Scramble the eggs until they are fully cooked through.
  5. Combine the eggs and potatoes in the skillet, then sprinkle in the shredded cheddar cheese and any optional diced ham or bacon.
  6. Stir everything together until the cheese melts and all ingredients are well mixed.
  7. Garnish with chopped chives or parsley before serving.

Notes

For extra crispiness, soak the cubed potatoes in water for 30 minutes before cooking; dry thoroughly before sautéing. Cook in batches if needed to avoid overcrowding the pan.
