Chocolate Protein Muffins

Delicious and nutritious chocolate protein muffins that are perfect for breakfast or a post-workout snack.

Ingredients

  • 1 cup Greek yogurt
  • 1 cup protein powder
  • 1/2 cup cocoa powder
  • 2 ripe bananas or 1 cup oats
  • 1/4 cup honey or maple syrup (optional)
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mash the ripe bananas until smooth, or blend the oats with Greek yogurt until creamy.
  3. Add the protein powder, cocoa powder, honey (if using), baking powder, vanilla extract, and salt to the bowl.
  4. Gently stir until just combined; be careful not to overmix.
  5. Fold in chocolate chips for a deliciously chocolaty surprise, if desired.
  6. Divide the batter evenly among the muffin cups, filling them about 2/3 full.
  7. Bake for 15-20 minutes; check for doneness with a toothpick.
  8. Allow muffins to cool in the tin for a few minutes, then transfer to a wire rack to cool completely.

Notes

Serve warm with nut butter or honey. Store in an airtight container at room temperature for up to three days, or freeze for longer storage.
