Cinnamon Roll Protein Muffins

Delightful and healthful muffins packed with protein, perfect for breakfast or a post-workout snack.

Ingredients

  • 2 cups rolled oats
  • 1 cup protein powder
  • 1 cup unsweetened applesauce
  • 1 cup almond milk
  • 2 large eggs
  • 1/3 cup honey or maple syrup
  • 2 teaspoons baking powder
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts
  • 1/2 cup raisins

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin pan with nonstick spray or liners.
  2. Combine the rolled oats, protein powder, baking powder, ground cinnamon, and salt in a large mixing bowl.
  3. Whisk together the applesauce, almond milk, eggs, and honey (or maple syrup) in another bowl.
  4. Pour the wet ingredients into the dry mixture and stir until just combined.
  5. Fold in the chopped nuts and raisins (or chocolate chips if desired).
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack.

Notes

Store leftovers in an airtight container for up to 3 days at room temperature, or refrigerate for up to a week. They can be frozen for up to 3 months.
