  • 1/4 tsp vanilla extract

  • 1 tbsp ground cinnamon (for coating)

  • Maple syrup (optional, for serving)
  • Chopped nuts (optional, for serving)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a 12-cup muffin tin with paper liners.
  2. Whisk together the flour, 1 cup of sugar, baking powder, salt, and cinnamon in a medium bowl until thoroughly combined.
  3. Mix the melted butter, milk, eggs, nutmeg, and vanilla extract in a large bowl until smooth.
  4. Combine the dry ingredients into the wet mixture gradually, stirring gently until just combined. Be careful not to overmix!
  5. Fill each muffin cup about two-thirds full with the batter.
  6. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool in the tin for about 5 minutes before transferring them to a wire rack.
  8. Prepare the coating by mixing the granulated sugar and additional cinnamon in a shallow dish.
  9. Dip the tops of warm muffins into the cinnamon sugar mixture to coat them.
  10. Return muffins to the oven for an additional 2-3 minutes to achieve a crispy top.

Notes

Serve warm with whipped cream, powdered sugar, fresh berries, maple syrup, or chopped nuts. Store in an airtight container for up to 3 days or refrigerate for up to a week.
