Instructions

  1. Preheat the oven: Set it to 350°F (175°C). Grease a muffin tin with cooking spray or oil.
  2. Blend the base: In a blender, combine cottage cheese, eggs, salt, and pepper. Blend until the mixture is smooth and creamy.
  3. Mix in the flavor: In a separate bowl, mix your chopped vegetables with the shredded cheese.
  4. Combine the mixture: Pour the blended egg mixture over the veggies and cheese, stirring until everything is fully combined.
  5. Fill the tin: Divide the mixture evenly among the greased muffin tin cups.
