Cottage Cheese Egg Bites

Delicious and protein-packed cottage cheese egg bites, perfect for breakfast or a quick snack.

  • 8 whole Eggs
  • 1 cup Cottage Cheese
  • 1 cup Bacon Bits
  • 1 teaspoon Garlic Powder
  • 1 cup Colby Jack Cheese
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • Cooking Oil Spray

Instructions

  1. Preheat your oven to 375°F (190°C). Coat a muffin pan with cooking spray to prevent sticking.
  2. In a large mixing bowl, whisk together the eggs, cottage cheese, garlic powder, salt, and black pepper until smooth and well combined.
  3. Gently fold in the bacon bits and the Colby Jack cheese, ensuring they are evenly distributed throughout the mixture.
  4. Pour the mixture evenly into the prepared muffin cups, filling each about three-quarters full to allow for rising.
  5. Bake in the preheated oven for 20-25 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
  6. Let the bites cool for a few minutes before gently removing them from the pan for serving.

Notes

Feel free to substitute bacon for diced vegetables or cooked ham. These bites can be stored in the refrigerator for up to four days or frozen for up to two months.
