Cottage Cheese Egg Bites

Delicious, protein-packed breakfast bites made with cottage cheese and eggs, perfect for meal prep or a family brunch.

  • 1 cup cottage cheese
  • 6 eggs
  • 1/2 cup diced bell peppers
  • 1/2 cup spinach, chopped
  • 1/2 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray or oil.
  2. Whisk together the eggs and cottage cheese until combined.
  3. Stir in diced bell peppers, chopped spinach, shredded cheese, salt, and pepper.
  4. Pour the mixture evenly into the greased muffin tin.
  5. Bake for about 20-25 minutes, or until the egg bites are set and slightly golden on top.
  6. Let them cool for a few minutes before removing from the tin. Enjoy warm or store in the fridge.

Notes

These bites can be customized with different vegetables or cheeses. Store in an airtight container for up to 5 days in the fridge.
