A delightful cottage cheese flatbread that is soft on the inside with a slight crunch outside, perfect for any meal.

  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • Optional toppings (herbs, cheese, or vegetables)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the cottage cheese, eggs, flour, baking powder, and salt in a large mixing bowl. Mix until a cohesive dough forms.
  3. Dust a clean surface with flour and gently knead the dough for about a minute.
  4. Shape the dough into your desired flatbread size.
  5. Line a baking sheet with parchment paper and place the flatbread on it.
  6. Brush the top with olive oil and sprinkle your favorite toppings.
  7. Bake in the preheated oven for 15-20 minutes, or until the flatbread is golden brown.
  8. Remove from the oven, allow it to cool for a few minutes, slice, and serve.

Notes

For a lighter option, use low-fat cottage cheese or whole wheat flour for a nuttier flavor.
