Cottage Cheese Frittata and Cheddar Bagel Sandwiches

A delicious blend of creamy cottage cheese, cheesy goodness, and fresh veggies, perfect for a filling meal or snack.

  • 6 large eggs
  • 1 cup cottage cheese
  • 1 cup shredded cheddar cheese
  • 1 bell pepper, diced
  • 1/2 onion, diced
  • Salt and pepper, to taste
  • 4 bagels
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, crack and beat the eggs until they’re well combined.
  3. Stir in the cottage cheese, shredded cheddar cheese, diced bell pepper, and chopped onion. Season generously with salt and pepper.
  4. Pour the egg mixture into a greased baking dish.
  5. Bake for 25-30 minutes or until the eggs are completely set and the top is lightly golden.
  6. Once baked, let the frittata cool slightly before slicing the dish into sections that will fit nicely into your bagels.
  7. Assemble your sandwiches by placing a slice of the frittata between the halved bagels.
  8. Serve the sandwiches warm or store them for a convenient snack.

Notes

Add spices like smoked paprika for extra flavor. You can prepare the frittata mixture the night before to save time in the morning.
