Dark Chocolate Protein Muffins

Delicious and nutritious dark chocolate protein muffins that satisfy your cravings while packing a protein punch.

  • 1 cup Kodiak pancake mix
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup chocolate protein powder
  • 1/2 cup milk (or dairy-free alternative)
  • 1/4 cup honey or maple syrup
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. Combine in a mixing bowl the Kodiak pancake mix, unsweetened cocoa powder, and chocolate protein powder.
  3. Whisk together in another bowl the milk, honey (or maple syrup), and eggs until well combined.
  4. Pour the wet mixture into the dry ingredients and mix just until combined; don’t overmix.
  5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  6. Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow muffins to cool before transferring them to a wire rack.

Notes

For optimal results, do not overmix the batter to ensure light and fluffy muffins. You can personalize your muffins with chocolate chips or nuts for added flavor.
