Easy Egg Bites

Delicious and nutritious egg bites, perfect for busy mornings or brunch gatherings, featuring a mix of eggs, veggies, and cheese.

  • 8 eggs
  • 1/2 cup half-and-half or milk
  • 1/4 cup diced green pepper
  • 1/4 cup green onions
  • 1/4 cup chopped spinach
  • 3/4 cup diced ham or bacon (cooked), divided
  • 3/4 cup shredded cheddar cheese, divided
  • 1/4 tsp salt
  • 1/8 tsp pepper

Instructions

  1. Preheat the oven to 350°F and lightly grease a muffin tin or silicone muffin cups with cooking spray.
  2. Chop the vegetables: Dice the green peppers, green onions, and spinach. Prepare your choice of cooked bacon or ham.
  3. Assemble the filling: Divide the diced green peppers, green onions, chopped spinach, and 1/2 cup of your cooked meat among the muffin cups.
  4. Mix the egg base: In a medium bowl, whisk together the eggs, half-and-half (or milk), salt, pepper, and 1/2 cup of the shredded cheese.
  5. Pour the egg mixture: Fill each muffin cup with the egg mixture, about three-quarters full.
  6. Top it off: Sprinkle the reserved meat and remaining cheese on top of each cup.
  7. Bake: Place the muffin tin in the oven and bake for 18-20 minutes. Check for doneness at 18 minutes; if the centers jiggle, continue baking in 2-minute increments until set.
  8. Serve warm: The egg bites will puff up during baking but may deflate slightly after being removed from the oven—enjoy them warm!

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze them wrapped in plastic wrap.
