Easy Flourless Oatmeal Carrot Cake

A delicious and nutritious carrot cake made without flour, packed with oats and carrots, perfect for any occasion.

  • 2 eggs
  • ½ cup honey
  • 2 carrots, shredded
  • 1 cup oats
  • ½ tsp baking soda
  • 1 tbsp cinnamon
  • ¼ cup butter, room temperature
  • 1 tsp vanilla

Instructions

  1. Preheat your oven to 180°C (300°F).
  2. In a large bowl, combine all the ingredients except for the shredded carrots.
  3. Using an immersion blender, mix everything until you achieve a smooth consistency.
  4. Gently fold in the shredded carrots until they’re evenly incorporated into the batter.
  5. Line a small baking pan (7×7 inches or about 18cm) with parchment paper for easy release.
  6. Pour the batter into the prepared pan, spreading it out evenly.
  7. Bake your cake for 20-30 minutes. It’s done when a toothpick inserted in the center comes out clean.
  8. Allow the cake to cool completely before slicing into generous portions. Enjoy your delicious creation!

Notes

Feel free to swap honey for maple syrup or use dairy-free butter. Use freshly shredded carrots for better flavor and moisture.
