Easy High-Protein Breakfast Burrito

A quick and nutritious breakfast burrito packed with protein from eggs and cottage cheese, loaded with fresh vegetables.

  • 4 large eggs
  • 1/2 cup cottage cheese
  • 1/2 cup cooked black beans
  • 1/2 cup diced bell peppers
  • 1/2 cup chopped spinach
  • 1 avocado, sliced
  • 4 whole wheat tortillas
  • Salt and pepper to taste
  • Salsa or hot sauce for serving

Instructions

  1. In a bowl, whisk the eggs, cottage cheese, salt, and pepper until blended.
  2. Preheat a non-stick skillet on medium heat. Pour in the egg mixture and stir gently. Cook until the eggs are scrambled and fully set.
  3. Toss in the black beans, diced bell peppers, and chopped spinach. Cook for an additional minute until everything is heated through.
  4. Lay a tortilla flat on a clean surface. Spoon the warm egg mixture down the center and add sliced avocado on top.
  5. Carefully roll the tortilla tightly, folding the ends in to secure the filling. Repeat this with any remaining tortillas.
  6. Serve immediately while warm, with salsa or hot sauce for a spicy twist!

Notes

To store leftovers, let them cool completely. Store in an airtight container in the refrigerator for up to three days. Reheat in the microwave or skillet until warmed through.
