Easy High-Protein Egg Bites

These Easy, High-Protein Egg Bites are versatile, delicious, and simple to make, perfect for breakfast or snacks.

  • 12 large eggs
  • 1 cup cottage cheese (full fat or low fat)
  • 1/2 cup milk (any kind)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup cooked, crumbled bacon or diced ham
  • 1/4 cup finely chopped spinach (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a standard 12-cup muffin tin or silicone molds.
  2. Whisk together the eggs, cottage cheese, milk, salt, and black pepper until smooth in a large bowl.
  3. Fold in the shredded cheese, crumbled bacon or diced ham, and chopped spinach if you’re using it.
  4. Pour the egg mixture into the muffin cups, filling each about three-quarters full.
  5. Bake for 18 to 22 minutes, or until the egg bites are fully set and lightly golden.
  6. Allow to cool for about 5 minutes before removing from the tin.
  7. Serve warm or let them cool completely for storage.

Notes

Use room-temperature ingredients for a smoother mixture and don’t overfill the muffin cups.
