Egg and Spinach Breakfast Bites

A delightful breakfast option combining protein-packed eggs, nutrient-rich spinach, and creamy cheese, perfect for busy mornings.

  • 6 Eggs
  • 2 cups Fresh spinach, chopped
  • 4 oz Cream cheese
  • 1 cup Cheese (your choice)
  • 1/4 cup Coconut flour
  • 1/2 cup Almond milk
  • 2 tbsp Chia seeds
  • 1 Avocado, for serving

Instructions

  1. Preheat your oven to 350°F if you’re baking.
  2. Chop the spinach and any other vegetables you’d like to include.
  3. Measure out your almond milk and mix the coconut flour with chia seeds in a separate bowl.
  4. Combine the eggs and cream cheese in a larger bowl, blending until smooth.
  5. Stir in the chopped spinach, any other veggies, and cheese until everything is evenly mixed.
  6. Pour the mixture into a muffin tray if baking or onto a skillet if making pancakes.
  7. Bake for 20-25 minutes or cook pancakes on medium heat until golden brown on both sides.
  8. Serve hot with sliced avocado or a drizzle of low-carb syrup.

Notes

These bites can be customized with different cheeses or extra veggies. They freeze well for up to 2 months.
