Egg White Bites

Egg White Bites are a delicious and nutritious option for a protein-packed snack or meal, perfect for busy mornings.

  • 1 cup pasteurized egg whites
  • 2 large whole eggs
  • ½ cup cottage cheese, blended smooth
  • ½ cup shredded cheddar cheese
  • 1 cup fresh spinach, chopped
  • ½ tsp onion powder
  • ¼ tsp garlic powder
  • Salt, to taste
  • Black pepper, to taste
  • Non-stick spray or silicone muffin liners

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare your muffin tin with non-stick spray or muffin liners.
  2. Combine the egg whites, whole eggs, and cottage cheese in a blender. Blend on high for 30-45 seconds until smooth.
  3. Transfer the blended mixture to a bowl. Stir in the cheddar cheese, spinach, onion powder, garlic powder, salt, and black pepper until well combined.
  4. Pour the mixture into the muffin tin, filling each cup about three-quarters full.
  5. Bake for 20-25 minutes. The tops should be golden, and a toothpick inserted should come out clean.
  6. Allow to cool for 5 minutes before carefully removing from the pan. Serve warm or store for later enjoyment.

Notes

Store in an airtight container in the refrigerator for 3-5 days. For longer storage, freeze individually wrapped bites.
