Flourless Cottage Cheese Pancakes

Delicious and fluffy pancakes made without flour, perfect for a healthy breakfast.

  • 1 cup cottage cheese
  • 4 large eggs
  • 1/2 cup rolled oats (optional)
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Butter or oil for cooking

Instructions

  1. In a blender, combine the cottage cheese and eggs.
  2. If you’re using rolled oats, add those in as well, along with the baking powder, vanilla extract, and salt.
  3. Blend the mixture until it’s smooth and creamy.
  4. Heat a non-stick skillet over medium heat and add a small amount of butter or oil.
  5. Pour 1/4 cup of the batter onto the skillet for each pancake.
  6. Cook for 2-3 minutes, or until bubbles form on the surface.
  7. Flip the pancake and cook for an additional 2-3 minutes, until golden brown.
  8. Serve warm with your favorite toppings like fresh fruit, maple syrup, or yogurt.

Notes

For best results, ensure your skillet is well-heated before adding the batter. You can customize with cinnamon or nutmeg for extra flavor.
