Instructions

  1. Combine the cottage cheese, eggs, almond flour, baking powder, vanilla extract, and salt in a blender until smooth and creamy.
  2. Preheat a non-stick skillet over medium heat and add a splash of butter or oil.
  3. Pour a ladleful of batter onto the skillet.
  4. Cook until bubbles form on the surface (about 2-3 minutes).
  5. Flip the pancake and cook until golden brown on the other side.
