Flourless Cottage Cheese Pancakes

A delightful twist on the classic breakfast pancakes, these flourless pancakes are easy to make, packed with protein, and naturally gluten-free.

  • 1 cup cottage cheese
  • 2 large eggs
  • 1/2 cup oat flour
  • 1 teaspoon baking powder
  • Salt to taste
  • Cooking spray or oil for the pan

Instructions

  1. Add the cottage cheese, eggs, oat flour, baking powder, and a pinch of salt into a blender.
  2. Blend until the mixture is smooth, and all ingredients are well combined.
  3. Heat a non-stick skillet over medium heat, lightly greasing it with cooking spray or a splash of oil.
  4. Pour your pancake batter into the skillet in your desired size—small or large, it’s entirely up to you!
  5. Cook for 2-3 minutes or until bubbles form on the surface of the pancakes.
  6. Flip the pancakes and continue cooking for another 2-3 minutes until they are golden brown.
  7. Serve warm with your favorite toppings like maple syrup, fresh fruit, or a dollop of yogurt.

Notes
