Instructions

  1. Blend the Base: In a blender or mixing bowl, combine cottage cheese, eggs, vanilla extract, salt, and baking powder. Blend or whisk until the mixture is completely smooth.
  2. Add Sweetness: If you wish to sweeten the pancakes, mix in honey or maple syrup at this stage.
  3. Preheat the Pan: Lightly coat a non-stick skillet with butter or oil and preheat it over medium heat.
  4. Cook the Pancakes: Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface—this typically takes 2-4 minutes.
  5. Flip and Finish: Carefully flip the pancake and cook for an additional 2-3 minutes until golden brown and cooked through.
  6. Serve: Stack the pancakes on a plate and serve warm with your favorite toppings.
