Fluffy Baked Apple Cinnamon Oatmeal Cups

A delightful twist on traditional oatmeal, these fluffy oatmeal cups are infused with warm cinnamon and sweet apples, making them perfect for busy mornings or leisurely brunches.

  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 cups milk (or dairy-free alternative)
  • 2 eggs
  • 2 tablespoons maple syrup (or honey)
  • 1 cup diced apples
  • Optional toppings: chopped nuts or raisins

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin with oil or butter.
  2. In a mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together the milk, eggs, and maple syrup until smooth.
  4. Pour the wet mixture into the dry ingredients, stirring until everything is well combined.
  5. Gently fold in the diced apples to ensure they are evenly distributed.
  6. Divide the mixture evenly among the muffin cups, filling each almost to the top.
  7. Bake for 20-25 minutes, or until the cups are set and lightly golden on top.
  8. Let them cool for a few minutes before removing from the tin.

Notes
