  • 1 teaspoon Vanilla extract
  • Fresh fruit, nuts, or yogurt (for serving)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine dry ingredients: In a mixing bowl, whisk together the protein powder, flour, and baking powder.
  3. Mix wet ingredients: In another bowl, whisk together the milk, egg, sweetener, and vanilla extract until smooth.
  4. Combine mixtures: Pour the wet ingredients into the dry ingredients. Stir gently until just combined; be careful not to overmix.
  5. Prep muffin pan: Grease a muffin pan, then divide the batter evenly among the cups.
  6. Bake: Place the muffin pan in the oven and bake for about 15-20 minutes. The bowls should be puffed and lightly golden when done.
  7. Cool and serve: Allow the pancake bowls to cool slightly before removing them from the pan. Serve warm with your choice of toppings.
