  • 1 cup frozen hash browns
  • 6 large eggs
  • 1/2 cup milk
  • 1 cup shredded cheese
  • 1/2 cup cooked sausage or bacon (optional)
  • Salt and pepper to taste
  • Salsa (for serving, optional)

Instructions

  1. Cook the frozen hash browns in a skillet according to the package instructions until crispy. Once done, set them aside.
  2. Whisk together the eggs and milk in a large bowl. Add salt and pepper to taste.
  3. Scramble the egg mixture in the same skillet over medium heat until fully cooked.
  4. Layer a tortilla with crispy hash browns, scrambled eggs, cheese, and cooked sausage or bacon, if desired.
  5. Roll the burrito tightly, folding in the sides to secure the filling.
  6. Wrap each burrito in aluminum foil and place them in a freezer-safe bag.
  7. Remove the foil when ready to enjoy and microwave for 2-3 minutes until heated through. Serve with salsa if you like!

Notes

These burritos can last up to three months in the freezer. For a crispier finish, consider using an air fryer after microwaving.
