Garlic Butter Steak Bites & Eggs

A comforting dish combining tender steak bites, crispy potatoes, and perfectly cooked eggs, all drenched in a garlic butter sauce.

  • 1 lb beef sirloin or ribeye, cut into bite-size cubes
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 2 tbsp fresh chopped chives or parsley
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/2 tsp crushed red pepper (optional)
  • 2 cups potatoes, diced
  • 1/2 tsp garlic powder
  • Salt & pepper to taste
  • 34 eggs
  • 1 tbsp butter or oil
  • Pinch of black pepper
  • Pinch of dried herbs (parsley, chives, oregano)

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  2. Add the diced potatoes and cook until golden brown and crispy. Season with paprika, garlic powder, salt, and pepper. Remove the potatoes from the skillet and set aside.
  3. In the same skillet, add more olive oil and toss in the beef steak bites. Sear for about 2–3 minutes until browned.
  4. Mix in the butter, minced garlic, and optional crushed red pepper. Cook until desired doneness.
  5. Toss in the fresh chives or parsley and remove from heat.
  6. Melt 1 tablespoon of butter in a separate pan over medium heat. Cook the eggs according to preference, seasoning with black pepper and dried herbs.
  7. Plate the crispy potatoes, topped with steak bites, and finish with the cooked eggs.

Notes

For extra flavor, let the steak marinate in olive oil, salt, and pepper for 30 minutes before cooking. Avoid overcrowding the skillet for a perfect sear.
