Greek Yogurt Blueberry Pancakes

Fluffy Greek yogurt pancakes packed with blueberries, combining a delightful tang with sweetness for a perfect breakfast.

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup Greek yogurt
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup blueberries
  • Butter or oil for cooking

Instructions

  1. Start by mixing the flour, sugar, baking powder, baking soda, and salt in a large bowl.
  2. In another bowl, whisk together the Greek yogurt, milk, eggs, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid over-mixing for fluffy pancakes!
  4. Gently fold in the blueberries.
  5. Heat a non-stick skillet over medium heat and add a little butter or oil.
  6. Once the skillet is hot, pour about 1/4 cup of batter for each pancake.
  7. Cook until bubbles form on the surface, then flip and cook until golden brown, around 2-3 minutes per side.
  8. Serve warm, with extra blueberries or a drizzle of maple syrup on top.

Notes

Avoid over-mixing the batter; a few lumps are okay to keep pancakes fluffy. Preheat the skillet properly for even cooking.
