Greek Yogurt Pancakes

Light and fluffy pancakes made with Greek yogurt for a protein-packed breakfast that’s quick and easy to prepare.

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup Greek yogurt (2% plain)
  • ¼ cup milk (or water)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter (or oil)

Instructions

  1. Whisk together the flour, sugar, baking powder, and salt in a small bowl.
  2. Combine the Greek yogurt, milk, eggs, vanilla extract, and melted butter in a medium bowl. Whisk until smooth and creamy.
  3. Add the dry ingredients to the wet mixture. Stir until just combined—don’t worry if a few lumps remain!
  4. Heat a large nonstick pan over medium heat for about 60-90 seconds. Lightly grease the pan with oil or butter.
  5. Pour ¼ cup of the batter onto the hot pan. Cook for roughly 2 minutes, or until you see bubbles forming and the edges start to dry.
  6. Flip the pancake and cook for an additional 1-2 minutes until golden brown.
  7. Repeat with the remaining batter, greasing the pan between each pancake for the best results.
  8. Serve warm with butter, maple syrup, or your favorite toppings.

Notes

For a healthier option, substitute whole wheat flour for all-purpose flour and adjust the liquid as needed.
