Ham and Cheese Egg Cups

Delicious and easy-to-make ham and cheese egg cups, perfect for breakfast, snacks or meal prep.

Ingredients

  • 12 slices of ham
  • 12 eggs
  • 1/2 cup mozzarella cheese
  • Salt
  • Pepper
  • Green onions

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a muffin tin with non-stick spray or oil.
  3. Fit the slices of ham into the muffin tin, creating little cups.
  4. Evenly distribute the mozzarella cheese over each ham cup.
  5. Carefully crack one egg into each ham and cheese cup.
  6. Season with salt and pepper to taste.
  7. Bake for 15-18 minutes or until the eggs reach your desired doneness.
  8. Finish with a sprinkle of chopped green onions and enjoy!

Notes

For a vegetarian version, use vegetables instead of ham. Store leftovers in an airtight container in the fridge for 3-4 days.
