Healthy Baked Blueberry Greek Yogurt Fritters

Delightful fritters made with Greek yogurt and blueberries, perfect for breakfast or a light dessert.

  • 1 1/2 cups flour
  • 1/4 cup monk fruit (or other sweetener)
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 1 tsp vanilla extract
  • 3 tbsp butter
  • 11 oz Greek yogurt
  • 1 cup blueberries
  • 1/2 cup powdered monk fruit (for glaze)
  • 1/8 tsp vanilla extract (for glaze)
  • 1/4 cup almond milk (for glaze)

Instructions

  1. Preheat your oven to 350°F and grease a mini 24-count muffin tin.
  2. Whisk together the flour, monk fruit, baking powder, and salt in a large mixing bowl until well combined.
  3. Whisk the egg, melted butter, vanilla extract, and Greek yogurt in another bowl until just combined.
  4. Fold in the blueberries, ensuring they’re evenly distributed in the batter.
  5. Scoop the mixture evenly into the muffin tin compartments.
  6. Bake for about 15 minutes or until the fritters turn golden brown.
  7. Prepare the glaze by mixing the powdered monk fruit, smashed blueberries, vanilla extract, and almond milk in a bowl while baking.
  8. Dip each fritter into the glaze and place them on a parchment-lined baking sheet once baked.
  9. Broil the fritters for approximately 5 minutes, turning halfway for even glazing.
  10. Remove from heat and drizzle any leftover glaze on top before serving.

Notes

Store leftover fritters in an airtight container in the fridge for up to four days. Reheat in the microwave or oven. Experiment with raspberries or strawberries for a twist!
