Healthy Banana Breakfast Cheesecakes

Delightful mini cheesecakes made with ripe bananas, perfect for a nutritious breakfast or brunch treat.

  • 2 ripe bananas
  • 1 cup cream cheese
  • 1/2 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup oats
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Cooking spray or muffin liners

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners or spray with cooking spray.
  2. Mash the ripe bananas until smooth in a mixing bowl.
  3. Incorporate the cream cheese, Greek yogurt, honey (or maple syrup), vanilla extract, oats, cinnamon, and salt.
  4. Mix until everything is smooth and well combined.
  5. Pour the cheesecake mixture evenly into the prepared muffin tin.
  6. Bake for 20-25 minutes, or until the cheesecakes are set and lightly golden on top.
  7. Allow to cool before serving. Enjoy at brunch!

Notes

Serve warm or chilled, topped with fresh fruit or a drizzle of honey. Store leftovers in an airtight container for up to five days.
