Healthy Banana Chocolate Chip Oatmeal Muffins

Delicious and wholesome muffins made with ripe bananas and chocolate chips, perfect for breakfast or a snack.

  • 2 ripe bananas
  • 1 cup oatmeal
  • 1/2 cup chocolate chips
  • 1/2 cup yogurt or applesauce
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mash the ripe bananas in a mixing bowl until smooth.
  3. Add the yogurt or applesauce along with the eggs to the mashed bananas, mixing until well combined.
  4. Whisk together the oatmeal, baking powder, cinnamon, and salt in another bowl.
  5. Gradually mix the dry ingredients into the wet mixture until just combined. Avoid overmixing to keep them fluffy!
  6. Fold in the chocolate chips, ensuring they’re evenly distributed throughout the batter.
  7. Pour the batter into the muffin tin, filling each cup about two-thirds full.
  8. Bake for 15 to 20 minutes until a toothpick inserted into the center comes out clean.
  9. Let them cool briefly in the tin before transferring to a wire rack to cool completely.

Store muffins in an airtight container at room temperature for up to three days or freeze for up to three months.
