Healthy Berry Pastries

Delightful pastries made with wholesome whole wheat and almond flour, filled with fresh berries, perfect for breakfast or dessert.

  • 1 cup whole wheat flour
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup Greek yogurt
  • 1/4 cup coconut oil, melted
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup mixed berries (blueberries, raspberries, strawberries)
  • 1 egg (optional, for egg wash)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the whole wheat flour, almond flour, baking powder, and salt in a mixing bowl.
  3. Blend the honey (or maple syrup), Greek yogurt, and melted coconut oil in a separate bowl until smooth.
  4. Gradually incorporate the wet mixture into the dry ingredients. Stir gently until just combined.
  5. Fold in the mixed berries gently, ensuring they stay intact.
  6. Roll out the dough on a lightly floured surface and cut it into desired pastry shapes.
  7. Place the pastries on a baking sheet lined with parchment paper.
  8. Brush the tops with a beaten egg, if desired.
  9. Bake for 15-20 minutes, or until golden brown.
  10. Allow to cool slightly before serving.

Notes

Ensure the coconut oil is warm, not hot, to prevent curdling the yogurt. Avoid overmixing the dough.
