Healthy Breakfast Cookies

Quick and wholesome breakfast cookies that are perfect for busy mornings or as a snack.

Ingredients

  • 1 cup rolled oats
  • 1 ripe banana, mashed
  • 1/2 cup nut butter (like almond or peanut)
  • 1/4 cup honey or maple syrup
  • 1/2 cup chocolate chips or dried fruits
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking powder
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the mashed banana, nut butter, honey or maple syrup, and vanilla extract until well blended.
  3. Add rolled oats, baking powder, and salt to the mixture. Stir thoroughly.
  4. Gently fold in chocolate chips or your choice of dried fruits.
  5. Scoop the mixture onto a lined baking sheet, leaving some space between each cookie.
  6. Bake for 10-12 minutes, or until the cookies are golden brown around the edges.
  7. Allow them to cool before transferring to an airtight container for storage.

Notes

These cookies can be stored in an airtight container for up to a week. For a vegan option, substitute honey with maple syrup.
