Healthy Breakfast Wrap

A delicious and nutritious breakfast wrap packed with protein from egg whites, a whole egg, fresh spinach, and turkey bacon.

  • 1/2 cup egg whites
  • 1 whole egg
  • 1 cup fresh spinach
  • 1 medium tomato, chopped
  • 1/2 teaspoon paprika
  • 1/2 teaspoon oregano
  • 1/2 teaspoon thyme
  • 3 slices turkey bacon
  • Salt and pepper to taste
  • 1/4 cup shredded cheese
  • 1 whole wheat tortilla wrap

Instructions

  1. Start by cooking the turkey bacon in a skillet over medium heat until crispy. Remove it from the skillet and set aside.
  2. In the same skillet, add the fresh spinach and chopped tomatoes. Sauté until the spinach wilts and the tomatoes soften.
  3. While your veggies are cooking, whisk together the egg whites and whole egg in a bowl. Season this mixture with salt, pepper, paprika, oregano, and thyme.
  4. Pour the egg mixture into the skillet with the sautéed veggies. Cook gently, stirring until the eggs are scrambled and fully cooked.
  5. Lay the whole wheat tortilla flat on a plate. On one half, layer the egg mixture, sautéed vegetables, crispy bacon, and sprinkle shredded cheese on top.
  6. Roll the tortilla tightly, then slice it in half to serve.

Notes

Pair with a smoothie or fresh fruit, and add salsa or hot sauce for extra flavor.
