20-Minute Healthy Caramelized Onion and Cheese Breakfast Burrito Bliss

A quick and satisfying breakfast burrito filled with caramelized onions and gooey cheese, perfect for busy mornings.

  • 1/4 cup shredded cheddar cheese
  • 1/2 medium onion, thinly sliced
  • 1 tbsp olive oil
  • 1 whole wheat tortilla
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a pan over medium heat.
  2. Add the sliced onions to the pan and cook until beautifully caramelized, about 10 minutes.
  3. Whisk the eggs in a bowl with a pinch of salt and pepper.
  4. Pour the seasoned eggs into the pan with the caramelized onions and scramble together until fully cooked, about 2-3 minutes.
  5. Sprinkle the shredded cheddar cheese over the mixture, allowing it to melt as you mix everything together.
  6. Warm the whole wheat tortilla in a dry pan for about 30 seconds on each side.
  7. Place the egg and onion mix onto the warm tortilla.
  8. Roll the tortilla into a burrito shape, folding in the ends as you go. Serve immediately!
