Healthy Egg Muffins

Whip up these nutritious and versatile Healthy Egg Muffins for a quick and satisfying breakfast or snack.

  • 8 large eggs
  • 1/4 cup milk
  • Salt and pepper (to taste)
  • 1 cup chopped spinach
  • 1/2 cup diced bell peppers
  • 1/4 cup finely chopped onion
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup shredded cheese
  • 1/4 cup cooked and crumbled turkey bacon or sausage (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your muffin tin by greasing it with nonstick spray or lining it with muffin liners.
  3. Whisk the eggs and milk together until fluffy.
  4. Season the mixture with salt and pepper to taste.
  5. Fold in the chopped spinach, diced bell peppers, onion, cherry tomatoes, shredded cheese, and turkey bacon or sausage if using.
  6. Pour the mixture evenly into the prepared muffin tin, filling each cup about two-thirds full to allow for rising.
  7. Bake in the preheated oven for 20 to 25 minutes, or until the muffins are set and lightly golden on top.
  8. Allow the muffins to cool in the tin for a few minutes before transferring them to a cooling rack.

Notes

Store in an airtight container in the fridge for up to one week. These muffins freeze beautifully for longer storage.
