These Healthy Oatmeal Breakfast Bars are a quick, nutritious grab-and-go option perfect for busy mornings. Customizable and budget-friendly, they’re a great snack for the whole family.

  • 2 cups rolled oats
  • 1/2 cup honey or maple syrup
  • 1/2 cup peanut butter or almond butter
  • 1/2 cup mashed banana or applesauce
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1/2 cup nuts or seeds (optional)
  • 1/2 cup dried fruit or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the rolled oats, honey (or maple syrup), nut butter, mashed banana (or applesauce), cinnamon, and vanilla extract until fully blended.
  3. Optional: Carefully fold in your choice of nuts or seeds, plus any dried fruits or chocolate chips you’d like.
  4. Spread the mixture into a greased baking dish. Press it down firmly for even packing.
  5. Bake in the oven for 20-25 minutes, until the top is golden brown.
  6. Once baked, allow the bars to cool completely before cutting them into squares.

Notes

Store bars in an airtight container at room temperature for up to 5 days, in the fridge for a week, or freeze for up to three months.
