High-Protein Baked Cottage Cheese Dish

A versatile baked dish combining cottage cheese and eggs that is perfect for breakfast or dinner.

  • 1 cup cottage cheese
  • 6 eggs
  • 1 cup spinach, chopped
  • 1/2 cup bell pepper, diced
  • 1/2 cup onion, diced
  • 1 cup cheese (cheddar or mozzarella), shredded
  • Salt and pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk the cottage cheese and eggs together until smooth.
  3. Fold in the chopped spinach, diced bell pepper, diced onion, shredded cheese, garlic powder, onion powder, and season with salt and pepper.
  4. Pour the mixture into a greased baking dish.
  5. Bake for 25-30 minutes, until eggs are firm and top is golden brown.
  6. Allow to cool slightly before slicing. Serve warm.

Notes

Use full-fat cottage cheese for a richer flavor. Customize with your choice of veggies and spices.
