High Protein Banana Blueberry Breakfast Bake

A wholesome breakfast bake featuring ripe bananas and fresh blueberries, packed with protein to fuel your day.

  • 2 ripe bananas, mashed
  • 1 cup blueberries, fresh or frozen
  • 1 cup rolled oats
  • 1 cup Greek yogurt
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the mashed bananas, Greek yogurt, eggs, honey, and vanilla extract. Mix until the ingredients are fully blended.
  3. Add in the rolled oats, baking powder, cinnamon, and salt. Stir until thoroughly combined.
  4. Gently fold in the blueberries, taking care not to crush them.
  5. Pour the mixture into a greased baking dish, spreading it evenly.
  6. Bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted comes out clean.
  7. Let it cool for a few minutes before slicing and serving.

Notes

For added flavor, consider substituting blueberries with raspberries or chopped nuts. Serve with Greek yogurt or a drizzle of honey.
